Kid-Friendly Left-over "Stir Fry"


You can either throw in last night's left-overs, or follow this approximate recipe :)...

4 cups rice uncooked
12 oz mixed veggies (this one has corn, carrots, green beans, and peas)
8 oz ham cubes

Place in a large skillet with a couple tbs of butter/margarine for about 10-15 minutes, stirring occasionally.  Or... Pam the skillet and occasionally spritz with a margarine spray while stirring.

My boys loved it!

(I took the corn out of Jack's serving, but he loved the rest)



I think the colors made it fun, but for some reason they've always liked peas (as long as it isn't pureed baby food :). What sort of left-overs do you "redesign" so your little ones will eat them?
