Chocolate Chip Banana Bread

My mom makes the best chocolate chip banana bread!! She'll make several loaves, and send one home with each of us kids... it doesn't last very long around our house... as in, maybe until the next morning?

2.5 c all-purpose flour
1tsp baking soda
3/4 tsp salt
1.5 c sugar
1/2 c vegetable oil
3 eggs
1.5 c mashed ripe bananas (about 3 large)
1-2c semisweet mini chocolate chips

Preheat oven to 325 degrees. Generously grease four 6x3x2 loaf pans.

In a medium bowl, stir flour, baking soda, and salt. Set aside.

In a large mixing bowl at medium speed, beat sugar, oil, and eggs until blended. Add bananas and beat until well blended. At low speed, beat in flour mixture just until blended. Stir in chocolate chips. Pour into loaf pans.

Bake for 45-50 minutes, or until a wooden toothpick inserted in center comes out clean.

Cool in foil pans for 10 minutes. Remove from pans and cool on wire racks. Wrap in plastic wrap, then foil. Store overnight before serving.

    Believe it or not, but here banana bread is not very familiar...

    1. Wow! Really? It's almost a staple here in the States! Definitely try it! You'll love it! Everyone one over here has their own spin on banana bread (ie. where my family loves chocolate chips, others might put in various nuts). Enjoy!
